Just as music and religion are an integral part of Acadian life, so is food.  Acadian, or Cajun cooking if you wish to call it, is very much a way of life for Acadians.  Although many consider this type of cooking very spicy, it need not be.  Only cooks without the true feel for Acadian cooking over spice their endeavors in a effort to duplicate or authenticate Acadian cooking.  In this celebration very authentic Acadian cooking took place to be enjoyed by those who attended.  The fare consisted of Crawfish Etoufee, fried alligator fritters, fried catfish fillet (small bite size), pork jambalaya, pot roasted stuffed brisket and many types of desert.  All this plus plenty of fresh vegetable salad.  None were in the sweat producing category, only delicious.  Our thanks to the many who labored so long and hard so that we could all enjoy a memorable feast.  Shown below are some of the cakes emblazoned by family crests, brought and sponsored by different families.
